One of my very favourite “easy”recipes, tastes soooo good! I’m getting antsy to incorporate more avocado into my cooking! This is oober delicious! Thank you for the recipe! This really looks great but what did you serve with it? I’ve got the Kamut Udon ones and made a soup with them last week. And simple. I have made it at least a dozen times since first trying it a few months ago. It’s sort of become a bit of a new creation, but the foundation is due incredible thanks as I would have never come up with this without it. I can’t wait to try it – I love pasta ;). – Season to taste and serve over pasta. I used 3 cloves of garlic and it was quite garlicky, so if you are not a big fan of garlic I would suggest using 1-2 cloves. I’m poor.) I love anything with the words “avocado” and “pasta”. We’ve dubbed it “guacamole pasta”. He LOVES avocado and pasta, so this was a pefect dish for him. It will not taste the same. I can’t win! This pasta sauce is incredible!! They really compliment the pasta. But the idea of using spelt pasta, and using AVOCADOS to make a sauce made me want to try this recipe. It took me longer than 15 minutes, more like 30, or i would rate it a 5. Wow wow wow. try this ~. ALSO, it NEEDS to be done in a food processor. :). I read about the garlic issues so I buzzed the garlic with salt, smashed with the back of a spoon for a moment or two, then added lemon juice etc. I loooove avocados to begin with but this was even better than I expected! I hope I did that correctly! I only made enough for one so I used the blender and it wasn’t quite as smooth as yours, but it was really good and I’m looking forward to making a full batch next time! Creamy pasta is total comfort food and this Creamy Avocado Pasta is ready in under 15 minutes. Guaca-yummy! Another option would be trying roasted garlic. WOW!! Sounds like a great recipe but a tip I learned from an italian chef is to never rinse pasta at all. So incredible in fact that I ate 2 servings!! Especially for cabbage salads as it wilts the cabbage and makes it all creamy. Just made it tonight. Wow that is amazing to hear. We used quinoa pasta (gf) and I omitted the basil because I didn’t have any on hand, and it was great (although I would love to try it with the basil). And it’s super healthy. A creamy pasta sauce doesn't have to be unhealthy, and we have made a super creamy sauce by blending up some avocado and adding lemon and basil for extra flavour. Drain well. I love this!! I would not add any extra salt next time (I have to watch my sodium intake), as the flavors from everything else is just like fireworks in your mouth! This one looks good, and I will certainly try it! will definitely be giving that a try! I added some white sugar and it balanced everything out. Oh we use those noodles sometimes too…great idea! I have new eyes when it comes to food – big, googly eyes. I am wondering about the re-heating.. is it just cuz it turns a funny color or does it taste really bad? I’ve already made this two nights and a row, and I’m not even kidding… I still want to have it again tonight. The sauce was so creamy and made very light with the inclusion of lemon juice. =D.
